I Made Soup

I made soup! And it is pretty darn good! I have an addiction to Thai Tom Yum soup and I order from my favorite Thai restaurant WAY too often.  My weakness is dining out or having food delivered. I love to cook, but cooking for one is just not that much fun. My Italian heritage has me wanting to cook for a family of 10! Back to the soup. I thought, Jenna just make it yourself and eat it all week for lunch. I'm always looking for lunch ideas. I hate canned soup and frozen dinners. Yuck. Feel free to pass on any lunch ideas.

My back is bugging me today, which means I'm not ready to start running. Boo. I may try to do a few crunches tomorrow. I dunno. Patience is a virtue, so they say.

Had a fun weekend. Ate and drank way too much, but enjoyed every second of it.  I just polished off 3/4 of a container of frozen yogurt. And now I'm going to try to find a funny to movie to watch. It's been a sad weekend in this country and I need some good ol' fashioned escapism. Why so many guns? Ugh.

Tomorrow I plan to-
Juice for breakfast! I really hope I follow through with this one.
Try some crunches.

  1. Sandwiches..I know it's boring. But if you want to stay away from the bread, try butterleaf lettuce. Add Turkey, reduced fat cheese and brown mustard. Three of those are around 4-5 WW points.

Make whole grain pasta for dinner. Use the leftovers for lunch; saute some stir fry veggies w/olive oil.

Cook chicken breast Sunday night then freeze.
    Day 1--Salad
Day 2--Quasidilla w/reduced fat cheese and pam
Day 3--Chicken salad; use olive oil may and through in almonds, raisins and apples

  2. Thanks! I'm not veggie, but I do get tired of chicken. It's so easy, tho! That chicken salad sounds really good. I'm gonna try it.
